  • 4 medium bell peppers (red, yellow, or green)
  • 1 lb lean ground beef (80/20)
  • 1 cup cooked white or brown rice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray.
  2. Cut the tops off each bell pepper and remove the seeds. Set them upright in the prepared baking dish.
  3. In a large skillet over medium heat, sauté diced onions until soft (about five minutes). Add minced garlic and cook until fragrant.
  4. Stir in ground beef until browned. Drain excess fat if necessary. Add cooked rice, crushed tomatoes, salt, pepper, cumin, paprika, and Italian seasoning. Mix well until combined.
  5. Spoon generous amounts of filling into each bell pepper until they overflow slightly. Top each pepper with shredded cheese.
  6. Cover the baking dish with foil and bake for about 25 minutes. Remove the foil for an additional five minutes to allow cheese to turn golden brown.
  7. Transfer to plates and serve warm alongside your favorite sides.
