  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint

Instructions

  1. Rinse and drain the canned chickpeas thoroughly. Pat dry with a towel.
  2. Chop the cherry tomatoes in half and dice the cucumber into bite-sized pieces. Thinly slice the red onion.
  3. In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, crumbled feta cheese, parsley, and mint. Gently toss together.
