- 1 cup cherry tomatoes, halved

- 1/2 cup crumbled feta cheese
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- Salt and pepper to taste
Instructions
- Rinse and drain the canned chickpeas thoroughly. Pat dry with a towel.
- Chop the cherry tomatoes in half and dice the cucumber into bite-sized pieces. Thinly slice the red onion.
- In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, crumbled feta cheese, parsley, and mint. Gently toss together.
- Drizzle olive oil and lemon juice over the salad mixture. Toss again until evenly coated.
- Season with salt and pepper to taste. Adjust as needed for flavor.
- Serve immediately or chill in the fridge for about an hour to allow flavors to meld.
