- 2 cups milk (dairy or plant-based)
- 2 medium apples, diced (Granny Smith or Honeycrisp)
- 1/3 cup pure maple syrup
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease an oven-safe baking dish lightly with nonstick spray or butter.
- Dice the apples into bite-sized pieces for even baking.
- In a large mixing bowl, combine rolled oats, baking powder, cinnamon, and a pinch of salt. Stir until well mixed.
- In another bowl, whisk together milk, maple syrup, vanilla extract, and half of the diced apples.
- Pour the wet mixture over the dry ingredients in the large mixing bowl. Stir until combined.
- Transfer the mixture to the greased baking dish. Top with remaining apple pieces and bake for 30-35 minutes until golden brown and set.
- Enjoy warm, drizzled with additional maple syrup if desired.
