  • 34 boneless, skinless chicken breasts
  • 2 cups diced carrots
  • 2 cups diced celery
  • 1 yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups biscuit mix
  • 1 cup milk

Instructions

  1. Dice the carrots, celery, onion, and garlic.
  2. Layer chopped vegetables in the bottom of the slow cooker. Place chicken breasts on top.
  3. Pour chicken broth over everything and add thyme. Season with salt and pepper.
  4. Cover and cook on low for about six hours or on high for three hours.
  5. About thirty minutes before serving, mix biscuit mix with milk in a bowl until just combined.
  6. Drop spoonfuls of the dumpling mixture onto the bubbling chicken mixture.
  7. Cover and let cook for an additional thirty minutes until dumplings are fluffy.
  8. Gently stir everything together before serving into bowls.
