Description

Warm up with this Spiced Red Lentil Soup, a comforting bowl filled with vibrant flavors and creamy texture, perfect for chilly days or cozy gatherings.

Ingredients

Scale
  • 1 cup red lentils
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 medium carrots, diced
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • Salt to taste

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Toss in the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and diced carrots, cooking for an additional 2 minutes until fragrant.
  2. Sprinkle in cumin, coriander, turmeric, and salt. Stir for about 1 minute to let the spices mingle with the vegetables.
  3. Pour in the red lentils along with vegetable broth. Bring to a gentle boil, then reduce heat to low. Cover and let it simmer for about 20 minutes.
  4. After simmering, use an immersion blender to blend until smooth (or transfer batches into a regular blender).
  5. Taste-test your soup and adjust seasoning if needed before serving.
  6. Ladle into bowls and garnish with fresh herbs or a dollop of yogurt if desired. Enjoy alongside crusty bread or salad!
