- 4 cups low-sodium vegetable broth

Instructions
- In a large pot over medium heat, add a splash of olive oil. Toss in the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and diced carrots, cooking for an additional 2 minutes until fragrant.
- Sprinkle in cumin, coriander, turmeric, and salt. Stir for about 1 minute to let the spices mingle with the vegetables.
- Pour in the red lentils along with vegetable broth. Bring to a gentle boil, then reduce heat to low. Cover and let it simmer for about 20 minutes.
- After simmering, use an immersion blender to blend until smooth (or transfer batches into a regular blender).
