Description

Warm your soul with this creamy Asiago Chicken and Gnocchi Soup—a comforting bowl of tender chicken, fluffy gnocchi, and rich Asiago cheese, perfect for chilly nights.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 2 medium carrots, sliced thinly
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup grated Asiago cheese
  • 2 tsp dried thyme
  • 16 oz store-bought gnocchi

Instructions

  1. 1. Prepare Your Ingredients: Gather all ingredients and chop the onion, garlic, carrots, and celery into bite-sized pieces.
  2. 2. Cook the Chicken: In a large pot over medium heat, drizzle olive oil and add chicken breasts. Season with salt and pepper; cook until golden brown on both sides—about six minutes per side. Remove from the pot and set aside.
  3. 3. Sauté Vegetables: In the same pot, add more olive oil if needed. Toss in onions, garlic, carrots, and celery. Sauté until tender—about five minutes.
  4. 4. Add Broth & Simmer: Pour in chicken broth along with dried thyme. Bring to a gentle simmer and return cooked chicken to the pot. Cover and simmer for about ten minutes.
  5. 5. Stir in Cream & Cheese: Remove chicken again; add heavy cream and grated Asiago cheese to the pot. Stir until melted for a creamy base.
  6. 6. Final Touches: Chop chicken into bite-sized pieces and return it along with gnocchi to the soup mix. Cook for another five minutes until everything is heated through.
  7. 7. Serve immediately in bowls, garnished with extra cheese or herbs if desired.
