  • 4 large Russet potatoes
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the Russet potatoes thoroughly and poke several holes in each with a fork. Place them directly on the oven rack and bake for about 45 minutes or until tender.
  3. Once baked, allow the potatoes to cool slightly. Cut each potato in half lengthwise and scoop out most of the flesh, leaving about a quarter-inch layer around the edges.
  4. Place the potato halves on the baking sheet, season with salt and pepper, and fill each skin with shredded cheddar cheese.
  5. Return to the oven and bake for an additional 10-15 minutes, or until cheese is melted and bubbling.
