Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash the Russet potatoes thoroughly and poke several holes in each with a fork. Place them directly on the oven rack and bake for about 45 minutes or until tender.
- Once baked, allow the potatoes to cool slightly. Cut each potato in half lengthwise and scoop out most of the flesh, leaving about a quarter-inch layer around the edges.
