  • 4 cod fillets (about 6 oz each)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tsp garlic powder
  • 2 tbsp lemon juice
  • 1 lb broccolini
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Trim the ends of the broccolini and toss them in a bowl with olive oil, salt, and pepper. Spread them on one side of the prepared baking dish.
  3. In a bowl, combine grated Parmesan cheese, panko breadcrumbs, and garlic powder.
  4. Pat dry the cod fillets and place them in the baking dish alongside the broccolini. Squeeze fresh lemon juice over each fillet before topping with the Parmesan mixture.
