  • 2 ripe avocados
  • 1 tbsp lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 2 large eggs
  • 2 tbsp dukkah spice mix

Instructions

  1. Toast the slices of whole grain bread until golden brown and crispy.
  2. Scoop out ripe avocados into a bowl and mash with a fork. Add lemon juice, salt, and pepper to taste for a creamy yet chunky texture.
  3. Bring a saucepan filled with water to a gentle simmer. Crack each egg into a small bowl and carefully slide it into the simmering water. Let each egg poach for about three minutes until the whites are set but yolk remains runny.
  4. Spread the mashed avocado generously over each slice of toasted bread.
  5. Sprinkle a generous amount of dukkah over the avocado layer on each toast.
  6. Carefully remove the poached egg from water using a slotted spoon and place it on top of each toast. Optionally add another sprinkle of salt and pepper before serving.
