Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1/4 cup fresh herbs (parsley or cilantro), chopped
  • Salt and pepper to taste

Instructions

  1. Prepare Ingredients: Chop the cherry tomatoes in half, dice the cucumber into small cubes, and finely chop the red onion.
  2. Mix Chickpeas: In a large mixing bowl, combine the rinsed chickpeas and diced avocado.
  3. Add Vegetables: Gently fold in the halved cherry tomatoes, diced cucumber, finely chopped red onion, and crumbled feta cheese.
