- 1 lb pork tenderloin
- Salt and pepper to taste
- 1 tbsp olive oil
- 2 cups fresh cranberries
- 1/3 cup brown sugar
- 1/4 cup fresh orange juice
- 2 cloves garlic, minced
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
Instructions
- 1. Season the pork tenderloin with salt and pepper.
- 2. Set your Instant Pot to sauté mode, add olive oil, and sear the pork on all sides until browned (about 3-4 minutes per side). Remove from pot.
- 3. In the same pot, add minced garlic and sauté until fragrant (about 1 minute).
- 4. Add fresh cranberries, brown sugar, orange juice, and thyme. Stir well until mixed and simmering.
- 5. Place the seared pork tenderloin back into the pot, nestled in the cranberry mixture.
- 6. Close the lid and set to pressure cook on high for 10 minutes.
- 7. Once cooking is complete, release pressure carefully, slice the pork, and serve with cranberry sauce drizzled on top.
