Instant Pot Cranberry Sauce and Pork Tenderloin is a flavorful dish that combines tender meat with a tangy-sweet sauce, perfect for festive gatherings or cozy family dinners.

  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 cups fresh cranberries
  • 1/3 cup brown sugar
  • 1/4 cup fresh orange juice
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)

Instructions

  1. 1. Season the pork tenderloin with salt and pepper.
  2. 2. Set your Instant Pot to sauté mode, add olive oil, and sear the pork on all sides until browned (about 3-4 minutes per side). Remove from pot.
  3. 3. In the same pot, add minced garlic and sauté until fragrant (about 1 minute).
  4. 4. Add fresh cranberries, brown sugar, orange juice, and thyme. Stir well until mixed and simmering.
  5. 5. Place the seared pork tenderloin back into the pot, nestled in the cranberry mixture.
  6. 6. Close the lid and set to pressure cook on high for 10 minutes.
