- 4 large eggs
- 1 cup bell peppers (any color), chopped
- 1 cup fresh spinach, chopped

- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash and chop bell peppers and spinach. In a mixing bowl, crack the eggs, add a pinch of salt and pepper, and whisk until frothy.
- Place a nonstick skillet over medium heat and drizzle with olive oil. Allow it to warm up.
- Add the chopped bell peppers to the skillet. Sauté for about 3 minutes until tender.
- Stir in the fresh spinach and cook until wilted, about 1 minute.
- Pour the beaten eggs over the sautéed veggies. Gently stir with a spatula until combined.
