Ingredients

  • 4 large eggs
  • 1 cup bell peppers (any color), chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and chop bell peppers and spinach. In a mixing bowl, crack the eggs, add a pinch of salt and pepper, and whisk until frothy.
  2. Place a nonstick skillet over medium heat and drizzle with olive oil. Allow it to warm up.
  3. Add the chopped bell peppers to the skillet. Sauté for about 3 minutes until tender.
  4. Stir in the fresh spinach and cook until wilted, about 1 minute.
