- 1 cup fresh strawberries, diced
- 1 cup mango, diced
- 1 cup pineapple, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 8 oz tortilla chips
- 2 tbsp sugar
- 1 tsp cinnamon
- Cooking spray
Instructions
- Wash all fruits thoroughly. Dice strawberries, mango, and pineapple into small pieces.
- Finely chop the red onion and add to the fruits.
- In a large mixing bowl, combine all diced fruits and onion. Add cilantro and squeeze lime juice over the mixture.
- Cover and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 350°F (175°C).
- Lay tortilla chips on a baking sheet lined with parchment paper.
- In a small bowl, mix sugar and cinnamon together.
- Lightly spray tortilla chips with cooking spray and sprinkle generously with the cinnamon sugar mixture.
- Bake for about 10 minutes or until golden brown and crispy.
