Ingredients

  • 1 cup fresh strawberries, diced
  • 1 cup mango, diced
  • 1 cup pineapple, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 8 oz tortilla chips
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • Cooking spray

Instructions

  1. Wash all fruits thoroughly. Dice strawberries, mango, and pineapple into small pieces.
  2. Finely chop the red onion and add to the fruits.
  3. In a large mixing bowl, combine all diced fruits and onion. Add cilantro and squeeze lime juice over the mixture.
  4. Cover and chill in the refrigerator for at least 30 minutes.
  5. Preheat your oven to 350°F (175°C).
  6. Lay tortilla chips on a baking sheet lined with parchment paper.
  7. In a small bowl, mix sugar and cinnamon together.
  8. Lightly spray tortilla chips with cooking spray and sprinkle generously with the cinnamon sugar mixture.
  9. Bake for about 10 minutes or until golden brown and crispy.
