A quick and flavorful one-pan dish featuring tender chicken, sweet figs, and juicy grapes, all roasted to perfection for a hassle-free meal.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 medium red onions, sliced thickly
  • 1 cup fresh grapes, halved
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking sheet with nonstick cooking spray.
  2. Season the chicken breasts generously with salt and pepper. Place them on one side of the prepared baking sheet.
  3. On the other side of the baking sheet, arrange the sliced red onions and halved grapes around the chicken.
  4. In a small bowl, whisk together balsamic vinegar, honey, garlic powder, and olive oil. Pour this mixture over everything on the sheet pan.
  5. Roast in the preheated oven for about 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are caramelized.
  6. Serve directly from the pan or transfer to plates. Drizzle any remaining sauce over the top before enjoying.
