- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 medium red onions, sliced thickly
- 1 cup fresh grapes, halved
- 1/2 cup balsamic vinegar
- 2 tbsp honey
- 1 tsp garlic powder
Instructions
- Preheat your oven to 400°F (200°C). Lightly spray a baking sheet with nonstick cooking spray.
- Season the chicken breasts generously with salt and pepper. Place them on one side of the prepared baking sheet.
- On the other side of the baking sheet, arrange the sliced red onions and halved grapes around the chicken.
- In a small bowl, whisk together balsamic vinegar, honey, garlic powder, and olive oil. Pour this mixture over everything on the sheet pan.
- Roast in the preheated oven for about 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are caramelized.
- Serve directly from the pan or transfer to plates. Drizzle any remaining sauce over the top before enjoying.
