Ingredients

  • 4 medium-sized fresh beets
  • 8 oz creamy goat cheese
  • 2 sheets puff pastry (store-bought)
  • 2 tbsp extra virgin olive oil
  • Fresh herbs (thyme or basil) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45-60 minutes until tender. Once cool, peel and slice thinly.
  2. Roll out thawed puff pastry on a floured surface. Cut into rectangles that will fit between beet layers. Prick lightly with a fork to prevent excessive puffing.
  3. Place pastry rectangles on a parchment-lined baking sheet. Bake for 15-20 minutes until golden brown. Let cool.
  4. On a serving plate, layer one piece of baked puff pastry, spread with goat cheese, and top with beet slices. Repeat until desired height is achieved.
  5. Drizzle olive oil over the top layer and sprinkle with fresh herbs for added flavor.
  6. Slice and serve immediately as an appetizer or light main course.
