- 4 medium-sized fresh beets
- 8 oz creamy goat cheese
- 2 sheets puff pastry (store-bought)
- 2 tbsp extra virgin olive oil
- Fresh herbs (thyme or basil) for garnish
Instructions
- Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45-60 minutes until tender. Once cool, peel and slice thinly.
- Roll out thawed puff pastry on a floured surface. Cut into rectangles that will fit between beet layers. Prick lightly with a fork to prevent excessive puffing.
- Place pastry rectangles on a parchment-lined baking sheet. Bake for 15-20 minutes until golden brown. Let cool.
- On a serving plate, layer one piece of baked puff pastry, spread with goat cheese, and top with beet slices. Repeat until desired height is achieved.
- Drizzle olive oil over the top layer and sprinkle with fresh herbs for added flavor.
- Slice and serve immediately as an appetizer or light main course.
