Instructions
- In a bowl, mix olive oil, lime juice, chili powder, garlic powder, salt, and pepper.
- Add chicken breasts to the marinade, ensuring they are well coated. Marinate for at least 1 hour (or overnight for best flavor).
- Remove husks and silk from corn cobs. Brush lightly with olive oil and sprinkle with salt.
- Preheat your grill or oven to medium-high heat (375°F or 190°C).
- Grill or bake marinated chicken for about 20-25 minutes or until it reaches an internal temperature of 165°F (75°C), turning halfway through.
- During the last ten minutes of cooking, place corn on the grill or in the oven alongside the chicken.
- Once cooked, slice the chicken and serve it hot with roasted corn. Drizzle extra lime juice over everything for added zest!
