  • 4 boneless, skinless chicken breasts
  • Juice of 2 fresh limes
  • 2 tbsp chili powder
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 ears of fresh corn on the cob
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. In a bowl, mix olive oil, lime juice, chili powder, garlic powder, salt, and pepper.
  2. Add chicken breasts to the marinade, ensuring they are well coated. Marinate for at least 1 hour (or overnight for best flavor).
  3. Remove husks and silk from corn cobs. Brush lightly with olive oil and sprinkle with salt.
  4. Preheat your grill or oven to medium-high heat (375°F or 190°C).
  5. Grill or bake marinated chicken for about 20-25 minutes or until it reaches an internal temperature of 165°F (75°C), turning halfway through.
  6. During the last ten minutes of cooking, place corn on the grill or in the oven alongside the chicken.
  7. Once cooked, slice the chicken and serve it hot with roasted corn. Drizzle extra lime juice over everything for added zest!
