  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder (Dutch-processed)
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1 cup toasted hazelnuts (chopped)
  • 1 cup dark chocolate (finely chopped)
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it.
  2. In a bowl, sift together the flour and cocoa powder. Add the granulated sugar and whisk until combined.
  3. In another bowl, beat the eggs until light and frothy (about five minutes). Gradually add melted butter while whisking until smooth.
  4. Gently fold the dry mixture into the egg mixture. Be careful not to overmix.
  5. Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for 12-15 minutes or until it springs back when touched.
  6. Once cool, carefully roll up the sponge cake using parchment paper to form a log shape. Unroll gently to add filling.
  7. In a saucepan over medium heat, combine heavy cream and chopped dark chocolate. Stir until melted and smooth to create ganache.
  8. Spread a layer of ganache inside the unrolled sponge cake, then sprinkle with chopped hazelnuts before rolling back up.
  9. Drizzle remaining ganache over the top of the rolled log for decoration.
