- 1/3 cup cocoa powder (Dutch-processed)
- 3/4 cup granulated sugar
- 4 large eggs
- 1/4 cup unsalted butter (melted)
- 1 cup toasted hazelnuts (chopped)
- 1 cup dark chocolate (finely chopped)
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it.
- In a bowl, sift together the flour and cocoa powder. Add the granulated sugar and whisk until combined.
- In another bowl, beat the eggs until light and frothy (about five minutes). Gradually add melted butter while whisking until smooth.
- Gently fold the dry mixture into the egg mixture. Be careful not to overmix.
- Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for 12-15 minutes or until it springs back when touched.
- Once cool, carefully roll up the sponge cake using parchment paper to form a log shape. Unroll gently to add filling.
- In a saucepan over medium heat, combine heavy cream and chopped dark chocolate. Stir until melted and smooth to create ganache.
- Spread a layer of ganache inside the unrolled sponge cake, then sprinkle with chopped hazelnuts before rolling back up.
- Drizzle remaining ganache over the top of the rolled log for decoration.
