Description

  • 2 cups mixed fresh mushrooms (cremini and shiitake), sliced
  • 2 tbsp olive oil
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp truffle oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface to about 1/8-inch thick. Transfer it into a tart pan, trimming any excess pastry hanging over the edges.
  3. In a skillet over medium heat, add olive oil and sauté the sliced mushrooms until golden brown and tender, about 5–7 minutes. Season lightly with salt and pepper.
  4. In a bowl, whisk together heavy cream, eggs, grated Parmesan cheese, and truffle oil.
  5. Add the sautéed mushrooms to the mixture and stir until well combined.
  6. Pour the mushroom filling into the prepared pastry shell, spreading it evenly.
  7. Bake in your preheated oven for about 25–30 minutes or until puffed up and golden brown.
  8. Allow to cool slightly before slicing and serve warm.
