Description

Indulge in these Blackberry Pistachio Dream Bars, featuring a buttery crust layered with tart blackberries and topped with crunchy pistachios—perfect for any gathering or sweet craving.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup chopped unsalted pistachios

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a square baking pan or line it with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Gradually add flour and baking powder, mixing until well combined.
  4. Press the mixture firmly into the bottom of the prepared pan to form an even crust.
  5. Bake for about 10 minutes until lightly golden.
  6. In another bowl, gently toss fresh blackberries with chopped pistachios, sugar, and eggs until combined but not mushy.
  7. Pour this berry mixture over the pre-baked crust, spreading it evenly with a spatula.
  8. Bake for an additional 30-35 minutes or until golden brown around the edges.
  9. Remove from the oven and let cool completely before slicing into bars.
