  • 8 oz fettuccine or penne pasta
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside, reserving some pasta water.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper. Cook each side for about 6-7 minutes until golden brown and cooked through. Remove from skillet and let rest.
  3. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about one minute until fragrant. Pour in heavy cream while stirring gently.
  4. Stir in fresh spinach and grated Parmesan cheese into the sauce until combined and spinach wilts (about two minutes).
  5. Add drained pasta directly into the skillet with the sauce. If the sauce is too thick, add reserved pasta water until desired creaminess is reached.
  6. Slice rested chicken into strips and place on top of the creamy pasta. Garnish with additional Parmesan or fresh herbs if desired.
