- 3–4 boneless, skinless chicken breasts
- 8 oz fettuccine or penne pasta
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream (or half-and-half for a lighter option)
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside, reserving some pasta water.
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper. Cook each side for about 6-7 minutes until golden brown and cooked through. Remove from skillet and let rest.
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about one minute until fragrant. Pour in heavy cream while stirring gently.
- Stir in fresh spinach and grated Parmesan cheese into the sauce until combined and spinach wilts (about two minutes).
- Add drained pasta directly into the skillet with the sauce. If the sauce is too thick, add reserved pasta water until desired creaminess is reached.
- Slice rested chicken into strips and place on top of the creamy pasta. Garnish with additional Parmesan or fresh herbs if desired.
