  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • 3 green onions, chopped

Instructions

  1. In a medium saucepan, bring water or chicken broth to a boil.
  2. Stir in grits, reduce heat to low, and cook until thickened (about 5-7 minutes), stirring occasionally. Season with salt and pepper.
  3. While the grits are cooking, season shrimp generously with Cajun seasoning.
  4. In a large skillet over medium-high heat, melt two tablespoons of butter. Add seasoned shrimp and cook until pink (about 3-4 minutes). Remove from heat but keep warm.
  5. In the same skillet, add heavy cream and bring to a simmer. Stir in any remaining Cajun seasoning; let bubble for about two minutes until slightly thickened.
  6. Once your grits are creamy, stir in more butter. Spoon sauce over grits and top with shrimp.
  7. Transfer into bowls and garnish with chopped green onions.
