- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 cup stone-ground grits
- 4 cups water or chicken broth
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- 3 green onions, chopped
Instructions
- In a medium saucepan, bring water or chicken broth to a boil.
- Stir in grits, reduce heat to low, and cook until thickened (about 5-7 minutes), stirring occasionally. Season with salt and pepper.
- While the grits are cooking, season shrimp generously with Cajun seasoning.
- In a large skillet over medium-high heat, melt two tablespoons of butter. Add seasoned shrimp and cook until pink (about 3-4 minutes). Remove from heat but keep warm.
- In the same skillet, add heavy cream and bring to a simmer. Stir in any remaining Cajun seasoning; let bubble for about two minutes until slightly thickened.
- Once your grits are creamy, stir in more butter. Spoon sauce over grits and top with shrimp.
- Transfer into bowls and garnish with chopped green onions.
