Description

Baked feta pasta with roasted tomatoes is a creamy, flavorful dish that combines tangy feta and sweet tomatoes with perfectly cooked pasta. This easy recipe is perfect for busy weeknights.


Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes, halved
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Drizzle a baking dish with a little olive oil.
  2. In the baking dish, combine cherry tomatoes and the block of feta cheese. Drizzle with olive oil and sprinkle minced garlic over the top. Season with salt and pepper.
  3. Roast in the preheated oven for about 25-30 minutes until the tomatoes burst and the feta is soft.
  4. While roasting, bring a large pot of salted water to boil. Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  5. Once roasted, mash the feta and tomatoes together with a fork to create a creamy sauce. Stir in the cooked pasta, adding reserved pasta water as needed to achieve desired consistency.
  6. Toss in freshly chopped basil before serving hot.
