  • 2 tablespoons lime juice (freshly squeezed)

  • 4 garlic cloves (minced)
  • 2 tablespoons vegetable oil
  • 1 cup low-sodium chicken broth
  • 1 scotch bonnet pepper (adjust to taste)

Instructions

  1. In a large bowl, combine jerk spice mix, lime juice, brown sugar, minced garlic cloves, and vegetable oil. Mix until well blended.
  2. Add boneless skinless chicken thighs to the marinade and coat generously. Cover and refrigerate for at least two hours or overnight for maximum flavor.
  3. Preheat your oven to 350°F (175°C). Place marinated chicken on a baking sheet lined with parchment paper. Bake uncovered for about 25-30 minutes until cooked through.
