- 4 garlic cloves (minced)

- 1 scotch bonnet pepper (adjust to taste)
Instructions
- In a large bowl, combine jerk spice mix, lime juice, brown sugar, minced garlic cloves, and vegetable oil. Mix until well blended.
- Add boneless skinless chicken thighs to the marinade and coat generously. Cover and refrigerate for at least two hours or overnight for maximum flavor.
- Preheat your oven to 350°F (175°C). Place marinated chicken on a baking sheet lined with parchment paper. Bake uncovered for about 25-30 minutes until cooked through.
- Once cooked and slightly cooled, shred the chicken into bite-sized pieces using two forks.
- In a saucepan over medium heat, combine chicken broth and any remaining marinade. Bring to a simmer and cook until slightly thickened, about five minutes.
- Transfer shredded chicken back into the pan with sauce to absorb flavors. Serve over rice or in tacos with additional lime juice.
