  • 1/2 cup sharp cheddar cheese, shredded (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a large baking dish with nonstick cooking spray.
  2. Cut the cabbage into quarters and remove the core. Chop it into bite-sized pieces. Blanch the chopped cabbage in boiling salted water for about five minutes until slightly tender but still crisp. Drain well and set aside.
  3. In a skillet over medium heat, melt two tablespoons of butter and sauté the chopped onions until they are soft and translucent, about three to four minutes.
  4. In a large mixing bowl, combine the blanched cabbage, sautéed onions, two cups of shredded cheddar cheese (reserve some for topping), sour cream, salt, and pepper. Stir until well combined.
  5. Transfer the cheesy cabbage mixture into the prepared baking dish. Sprinkle crushed crackers on top and finish with an additional half cup of shredded cheddar cheese.
