Instructions
- Preheat your oven to 350°F (175°C). Lightly spray a large baking dish with nonstick cooking spray.
- Cut the cabbage into quarters and remove the core. Chop it into bite-sized pieces. Blanch the chopped cabbage in boiling salted water for about five minutes until slightly tender but still crisp. Drain well and set aside.
- In a skillet over medium heat, melt two tablespoons of butter and sauté the chopped onions until they are soft and translucent, about three to four minutes.
- In a large mixing bowl, combine the blanched cabbage, sautéed onions, two cups of shredded cheddar cheese (reserve some for topping), sour cream, salt, and pepper. Stir until well combined.
- Transfer the cheesy cabbage mixture into the prepared baking dish. Sprinkle crushed crackers on top and finish with an additional half cup of shredded cheddar cheese.
- Bake in the preheated oven for about 30-35 minutes or until bubbly and golden brown on top.
