  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 crisp apples (like Granny Smith), diced
  • 1 cup toasted walnuts, chopped
  • 2 stalks celery, finely chopped
  • 1/2 cup dried cranberries
  • 1 cup plain Greek yogurt
  • 2 tbsp honey
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. 1. Bring a pot of salted water to a boil over medium heat. Add chicken breasts and cook until no longer pink inside, about 15-20 minutes. Alternatively, grill for added flavor.
