- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 crisp apples (like Granny Smith), diced
- 1 cup toasted walnuts, chopped
- 2 stalks celery, finely chopped
- 1/2 cup dried cranberries
- 1 cup plain Greek yogurt
- 2 tbsp honey
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- 1. Bring a pot of salted water to a boil over medium heat. Add chicken breasts and cook until no longer pink inside, about 15-20 minutes. Alternatively, grill for added flavor.
- 2. Once the chicken cools, chop it into bite-sized pieces. Dice apples and chop celery. Toast walnuts in a dry skillet over medium heat for about five minutes until fragrant.
- 3. In a large bowl, combine chopped chicken, diced apples, celery, walnuts, and dried cranberries.
- 4. In a small bowl, whisk together Greek yogurt, honey, lemon juice, salt, and pepper until smooth. Drizzle over the salad mixture and toss gently.
- 5. Place generous portions of the mixture onto whole grain or spinach wraps. Fold them tightly to prevent fillings from spilling out.
- 6. Serve immediately or store in an airtight container in the fridge for later enjoyment.
