- 2 cups shredded mozzarella cheese (whole milk for best results)

- 1/2 tsp black pepper
- 1 cup cherry tomatoes, halved (optional)
- 2 cups fresh spinach (optional)
Instructions
- Preheat your oven to 375°F (190°C) and prepare your baking dish.
- In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
- In a mixing bowl, combine pesto sauce and heavy cream until smooth. Season with salt and pepper.
- In your baking dish, mix together cooked tortellini, creamy pesto sauce, and half of the shredded mozzarella. Optionally, add halved cherry tomatoes and spinach for added flavor.
- Sprinkle the remaining mozzarella cheese evenly over the top and add extra Parmesan if desired.
- Bake in the preheated oven for about 25-30 minutes or until golden brown and bubbly.
