  • 1 cup pesto sauce (store-bought or homemade)
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese (whole milk for best results)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup cherry tomatoes, halved (optional)
  • 2 cups fresh spinach (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your baking dish.
  2. In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
  3. In a mixing bowl, combine pesto sauce and heavy cream until smooth. Season with salt and pepper.
