- 3–4 boneless, skinless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- Salt and pepper to taste
- 1/2 cup Caesar dressing
- 2 tbsp freshly squeezed lemon juice
- 4 slices crusty bread (ciabatta or sandwich bun)
- 2 cups romaine lettuce, chopped
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Season chicken breasts with salt and pepper. Dredge in flour, dip in beaten eggs, then coat with panko breadcrumbs.
- Place the breaded chicken on a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden brown and cooked through.
- In a small bowl, mix together Caesar dressing and freshly squeezed lemon juice.
- While the chicken bakes, chop romaine lettuce and grate Parmesan cheese.
- Once the chicken is done, slice if desired.
- Toast bread slices if preferred. Layer romaine lettuce on one slice of bread, followed by crispy chicken pieces.
- Drizzle with lemony Caesar sauce and sprinkle with Parmesan cheese before topping with another slice of bread.
- Serve with any remaining sauce drizzled on top.
