  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 2 large fresh oranges (juice and zest)
  • 1/4 cup granulated sugar
  • 1/2 cup chicken stock
  • 2 tbsp unsalted butter

Instructions

  1. Score the skin of each duck breast in a crisscross pattern without cutting into the meat.
  2. Season both sides generously with salt and pepper. Let sit at room temperature for 15 minutes.
  3. Preheat a dry skillet over medium-high heat. Place duck breasts skin-side down and sear for about 6 minutes until golden brown and crispy. Flip and cook for an additional 4 minutes.
  4. Preheat the oven to 400°F (200°C). Transfer duck breasts to a baking dish, skin-side up, and roast for 8-10 minutes until desired doneness (135°F/57°C for medium-rare).
  5. In the same skillet, add sugar and allow it to caramelize slightly.
  6. Stir in orange juice and zest, then add chicken stock and scrape any bits from the bottom of the pan.
  7. Simmer until slightly thickened, then remove from heat and whisk in butter until melted.
