- 1/4 cup granulated sugar
- 1/2 cup chicken stock
- 2 tbsp unsalted butter
Instructions
- Score the skin of each duck breast in a crisscross pattern without cutting into the meat.
- Season both sides generously with salt and pepper. Let sit at room temperature for 15 minutes.
- Preheat a dry skillet over medium-high heat. Place duck breasts skin-side down and sear for about 6 minutes until golden brown and crispy. Flip and cook for an additional 4 minutes.
- Preheat the oven to 400°F (200°C). Transfer duck breasts to a baking dish, skin-side up, and roast for 8-10 minutes until desired doneness (135°F/57°C for medium-rare).
- In the same skillet, add sugar and allow it to caramelize slightly.
- Stir in orange juice and zest, then add chicken stock and scrape any bits from the bottom of the pan.
- Simmer until slightly thickened, then remove from heat and whisk in butter until melted.
