- 4 duck legs
- 2 tbsp coarse salt
- 4 cloves garlic, minced
- 4 sprigs fresh thyme (or 1 tsp dried thyme)
- 4 cups duck fat
- 4 tart apples (e.g., Granny Smith), peeled and diced
- 2 tbsp sugar
- 1 tsp cinnamon
Instructions
- Rub duck legs generously with coarse salt, minced garlic, and thyme. Cure in the refrigerator overnight.
- Rinse off excess salt under cold water and pat dry with paper towels.
- In a heavy pot or Dutch oven, submerge duck legs in melted duck fat. Heat gently on low until it reaches about 200°F (93°C). Cover and cook for about 2 hours until fork-tender.
- Carefully remove duck legs from fat and reserve fat for future cooking.
- In a saucepan, combine diced apples, sugar, cinnamon, and a splash of water.
- Cook over medium heat for about 15-20 minutes until soft. Mash to desired consistency.
- Heat a skillet over medium-high heat. Sear each duck leg skin-side down for about 5 minutes until crispy.
- Serve crispy duck legs alongside generous dollops of apple sauce.
