Description

Fish Almondine is a delightful dish featuring pan-seared fish fillets coated in a rich, buttery almond sauce. Perfect for impressing guests or enjoying a cozy night in.


Ingredients

  • 4 fresh fish fillets (such as sole or tilapia)
  • Salt and pepper to taste
  • 2 tbsp unsalted butter
  • 1/2 cup sliced almonds
  • 3 tbsp unsalted butter
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley

Instructions

  1. Rinse the fish fillets under cold water, then pat dry with paper towels.
  2. Season both sides lightly with salt and pepper.
  3. In a skillet over medium heat, melt 1 tablespoon of butter.
  4. Add sliced almonds and stir frequently until golden brown, about 3-4 minutes. Remove from skillet and set aside.
  5. In the same skillet, add another tablespoon of butter and increase heat to medium-high.
  6. Once sizzling, gently place the seasoned fish fillets in the pan. Cook for about 3-4 minutes per side until they flake easily with a fork. Remove from skillet and keep warm.
  7. In the same skillet, add remaining butter and lemon juice. Stir to combine, scraping up any brown bits from the bottom for added flavor.
  8. Return cooked fish to the skillet briefly to coat in sauce.
  9. Sprinkle toasted almonds and chopped parsley over the top before serving.
