  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • Salt and pepper, to taste
  • 1 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 8 oz fettuccine or penne pasta

Instructions

  1. Cut chicken breasts into bite-sized pieces. Season with salt and pepper.
  2. Heat half of the butter in a skillet over medium heat. Cook chicken pieces until golden brown and cooked through, about 5 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, melt the remaining butter. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Sprinkle Cajun seasoning over the garlic butter mixture and stir for another minute to bloom the spices.
  5. Pour in heavy cream and stir in Parmesan cheese until melted and smooth.
  6. Toss cooked pasta into the skillet with the sauce, mixing well to coat. Return chicken bites to the skillet and mix until heated through.
