Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, ground ginger, cinnamon, nutmeg, and salt until well mixed.
  3. In another bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in milk and coffee or espresso powder until smooth.
  4. Gradually add the dry ingredients into the wet mixture until just combined; do not overmix.
  5. Spoon the batter into cupcake liners about two-thirds full to allow for rising.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let them cool on wire racks.
  7. In a medium bowl, beat together softened butter and powdered sugar until creamy.
  8. Mix in coffee or espresso powder until well blended.
