Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, sugar, baking powder, ground ginger, cinnamon, nutmeg, and salt until well mixed.
- In another bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in milk and coffee or espresso powder until smooth.
- Gradually add the dry ingredients into the wet mixture until just combined; do not overmix.
- Spoon the batter into cupcake liners about two-thirds full to allow for rising.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let them cool on wire racks.
- In a medium bowl, beat together softened butter and powdered sugar until creamy.
- Mix in coffee or espresso powder until well blended.
