Description

Delight in vibrant, smoky grilled peppers paired with creamy burrata and crunchy breadcrumbs, creating a dish that’s perfect for any occasion.

Ingredients

Scale
  • 4 medium bell peppers (red, yellow, or green)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp aged balsamic vinegar
  • Salt and freshly cracked black pepper to taste
  • 1 cup fresh burrata cheese
  • 1/2 cup toasted breadcrumbs
  • 1/4 cup fresh basil, chopped

Instructions

  1. Prepare Your Marinade: In a medium bowl, whisk together the olive oil and balsamic vinegar. Season with salt and black pepper.
  2. Marinate the Peppers: Slice the bell peppers into quarters, removing seeds and stems. Toss them in the marinade until well-coated. Allow them to marinate for at least 30 minutes.
  3. Preheat Your Grill: Heat your grill to medium-high (around 400°F or 200°C). Alternatively, you can roast them in the oven.
  4. Grill the Peppers: Place marinated peppers skin-side down on the grill. Cook for about 4-5 minutes on each side until tender and charred.
  5. Assemble Your Dish: On a serving platter, layer grilled peppers and dollops of burrata cheese.
  6. Add Some Crunch: Sprinkle the toasted breadcrumbs over the peppers and top with chopped basil. Drizzle any remaining marinade for added flavor.
