- 1 (5 lb) prime rib roast
- 3 tbsp fresh rosemary, chopped
- 3 tbsp fresh thyme, chopped
- 4 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup beef broth (low-sodium)
- 4 tbsp unsalted butter
Instructions
- Preheat your oven to 450°F (232°C).
- In a bowl, combine minced garlic, rosemary, thyme, salt, pepper, and olive oil; mix until it forms a paste.
- Rub the herb mixture all over the prime rib roast. Let it sit at room temperature for about 30 minutes.
- Place the seasoned prime rib on a roasting rack in a baking pan. Roast in the preheated oven for 20 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue cooking until desired doneness is reached (approximately another hour for medium-rare).
- After removing the roast from the oven, pour beef broth into the roasting pan, scraping up browned bits from the bottom.
- Simmer over medium heat until reduced by half. Stir in butter until melted and smooth.
- Allow the roast to rest for 20–30 minutes before slicing.
