Description

  • 1 (5 lb) prime rib roast
  • 3 tbsp fresh rosemary, chopped
  • 3 tbsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup beef broth (low-sodium)
  • 4 tbsp unsalted butter

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a bowl, combine minced garlic, rosemary, thyme, salt, pepper, and olive oil; mix until it forms a paste.
  3. Rub the herb mixture all over the prime rib roast. Let it sit at room temperature for about 30 minutes.
  4. Place the seasoned prime rib on a roasting rack in a baking pan. Roast in the preheated oven for 20 minutes.
  5. Reduce the oven temperature to 325°F (163°C) and continue cooking until desired doneness is reached (approximately another hour for medium-rare).
  6. After removing the roast from the oven, pour beef broth into the roasting pan, scraping up browned bits from the bottom.
  7. Simmer over medium heat until reduced by half. Stir in butter until melted and smooth.
  8. Allow the roast to rest for 20–30 minutes before slicing.
