- 1 cup fresh ricotta cheese
- 2 tablespoons fresh basil (finely chopped)
- 2 tablespoons fresh thyme (finely chopped)
- 2 large ripe tomatoes (sliced)
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the thawed puff pastry on a lightly floured surface until it's about an inch larger than your tart pan.
- Carefully place the pastry in the pan and trim any excess edges. Poke holes all over with a fork to prevent air bubbles.
- In a bowl, mix together ricotta cheese, chopped basil, chopped thyme, salt, pepper, and 1 tablespoon of olive oil until smooth.
- Spread the ricotta mixture evenly over the prepared pastry shell.
- Arrange sliced tomatoes artfully on top of the ricotta filling.
- Drizzle with remaining olive oil.
- Bake in preheated oven for 25-30 minutes or until the pastry is golden brown and puffed.
- Allow to cool slightly before slicing. Serve warm or at room temperature with a side salad or fresh fruit.
