  • 1 cup fresh ricotta cheese
  • 2 tablespoons fresh basil (finely chopped)
  • 2 tablespoons fresh thyme (finely chopped)
  • 2 large ripe tomatoes (sliced)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a lightly floured surface until it's about an inch larger than your tart pan.
  3. Carefully place the pastry in the pan and trim any excess edges. Poke holes all over with a fork to prevent air bubbles.
  4. In a bowl, mix together ricotta cheese, chopped basil, chopped thyme, salt, pepper, and 1 tablespoon of olive oil until smooth.
  5. Spread the ricotta mixture evenly over the prepared pastry shell.
  6. Arrange sliced tomatoes artfully on top of the ricotta filling.
