- 1 tsp dried thyme

Instructions
- Prepare Your Chicken: Dice the boneless, skinless chicken breasts into bite-sized pieces.
- Sauté Aromatics: In a large pot over medium heat, add olive oil. Sauté chopped onion, garlic, carrots, and celery until softened, about 5 minutes.
- Cook the Chicken: Add the diced chicken to the pot. Season with salt, pepper, and dried thyme. Cook until the chicken is no longer pink, approximately 6 minutes.
- Add Broth: Pour in the low-sodium chicken broth and bring to a gentle boil while scraping any bits from the bottom of the pot. Reduce heat and let simmer for about 10 minutes.
- Stir in Cream: Slowly pour in the heavy cream while stirring continuously. Allow to simmer gently for another 5 minutes until heated through.
