- 3–4 boneless, skinless chicken breasts
- 2 tsp Cajun seasoning
- 1 tbsp olive oil
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp hot honey
- 8 oz fettuccine or linguine
- 1/2 cup basil feta cheese (crumbled)
- 1 lb Brussels sprouts (trimmed and halved)
- 2 tbsp olive oil
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C). Prepare a baking sheet with nonstick cooking spray.
- Toss trimmed Brussels sprouts in olive oil, season lightly with salt and pepper, and spread them on the baking sheet.
- Roast in the oven for about 20-25 minutes until crispy.
- While the Brussels chips roast, season chicken breasts generously with Cajun seasoning.
- In a skillet over medium-high heat, add olive oil and sear chicken for about 6-7 minutes per side until golden brown and cooked through.
- Remove chicken from skillet and set aside to rest.
- In the same skillet, lower heat and pour in heavy cream. Stir in grated Parmesan cheese until melted and creamy.
- Add hot honey to the sauce for a sweet and spicy kick.
- Cook fettuccine according to package instructions until al dente. Drain pasta but reserve some pasta water for adjusting sauce consistency if needed.
- Slice rested chicken into strips and toss together with pasta and Alfredo sauce.
- Swirl in crumbled basil feta cheese before serving.
- Serve alongside crispy Brussels chips for a delightful crunch.
