Ingredients

Scale
  • 1 lb fresh green beans
  • 3 cloves garlic, minced
  • 1/2 cup sliced almonds, toasted
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup water or vegetable broth

Instructions

  1. Prepare Your Ingredients: Rinse the green beans under cold water and trim the ends. Mince the garlic cloves.
  2. Toast the Almonds: In a dry skillet over medium heat, toast the sliced almonds until golden brown and fragrant (about 3-4 minutes), stirring constantly.
  3. Sauté Garlic in the Instant Pot: Set your Instant Pot to sauté mode and add olive oil. Once hot, add the minced garlic and sauté until fragrant (about 1 minute).
  4. Add Green Beans: Add the trimmed green beans along with a pinch of salt and pepper. Toss in the garlicky oil for about 2 minutes.
  5. Pressure Cook: Pour in half a cup of water or vegetable broth, cover with the lid, and set to cook at high pressure for 2 minutes. Quickly release the pressure once done.
  6. Finish It Off: Carefully remove the lid, sprinkle toasted almonds over the top, and gently toss before serving.
