  • 1 lb lean ground beef
  • 1/2 cup panko breadcrumbs
  • 3 green onions, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup Korean BBQ sauce
  • 1 tsp sesame oil
  • 2 cups cooked rice (white or brown)
  • 1 cup assorted vegetables (carrots, cucumbers, etc.)
  • Sesame seeds for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, panko breadcrumbs, chopped green onions, minced garlic, and half of the Korean BBQ sauce. Mix until just combined.
  3. Shape the mixture into golf-ball-sized meatballs and place on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes until browned and cooked through.
  5. While the meatballs bake, cook the rice according to package instructions.
  6. Fluff rice with a fork and set aside.
  7. Layer cooked rice in bowls as the base. Top with meatballs and drizzle remaining Korean BBQ sauce over everything.
  8. Garnish with fresh veggies and sesame seeds before serving.
