  • 2 medium sweet potatoes (about 1 lb), cubed
  • 12 oz fresh green beans, trimmed

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Sweet Potatoes: Wash, peel, and cube sweet potatoes into one-inch pieces.
  3. Season the Sweet Potatoes: In a large bowl, toss sweet potato cubes with olive oil, salt, pepper, and half of the chipotle powder. Spread them on a baking sheet lined with parchment paper.
  4. Roast the Sweet Potatoes: Place sweet potatoes in the oven and roast for about 15 minutes until they begin to soften.
  5. Add Salmon and Green Beans: After 15 minutes, carefully remove the sweet potatoes from the oven. Add salmon fillets and green beans to the same baking sheet. Drizzle everything with maple syrup and sprinkle remaining chipotle powder over it.
  6. Finish Roasting: Return the baking sheet to the oven for an additional 12-15 minutes until salmon flakes easily with a fork and green beans are bright yet tender.
