Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until it resembles wet sand.
- Press the mixture firmly into the bottom of mini muffin tins lined with paper liners.
- In another bowl, beat softened cream cheese until smooth.
- Add sour cream, sugar, and vanilla extract; mix until fluffy.
- Add eggs one at a time, mixing well after each addition.
- Spoon the creamy filling over the prepared crusts in each muffin cup until three-quarters full.
- Bake in the preheated oven for about 20 minutes or until set around the edges but slightly jiggly in the center.
- Remove from oven and let cool in the pan for about an hour before transferring to a wire rack.
- Once cooled completely, top with fresh fruit or chocolate drizzle before serving.
