  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 tsp salt
  • 46 tbsp ice water
  • 2 cups mixed mushrooms (cremini and shiitake), cleaned and sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried thyme)
  • 1/2 cup Gruyère cheese, shredded (or mozzarella)
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, mix flour and salt.
  2. Cut in chilled butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water until dough forms; wrap in plastic wrap and refrigerate for at least 30 minutes.
  4. In a skillet over medium heat, melt a tablespoon of butter.
  5. Add minced garlic and sauté for about a minute.
  6. Add sliced mushrooms and cook until tender and moisture is released, about 5-7 minutes. Stir in thyme during the last minute.
  7. Preheat your oven to 400°F (200°C).
  8. Roll out chilled dough on a floured surface into a rough circle (about 12 inches).
  9. Place the dough on a parchment-lined baking sheet.
  10. Spread sautéed mushrooms in the center, leaving a one-inch border.
  11. Sprinkle Gruyère cheese over mushrooms.
  12. Fold edges of dough over filling, leaving an opening in the center.
  13. Brush edges with beaten egg for a golden finish.
  14. Bake for 30-35 minutes or until crust is golden brown.
