- 4–6 tbsp ice water
- 2 cups mixed mushrooms (cremini and shiitake), cleaned and sliced
- 2 cloves garlic, minced
- 1 tbsp fresh thyme, chopped (or 1 tsp dried thyme)
- 1/2 cup Gruyère cheese, shredded (or mozzarella)
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, mix flour and salt.
- Cut in chilled butter until the mixture resembles coarse crumbs.
- Gradually add ice water until dough forms; wrap in plastic wrap and refrigerate for at least 30 minutes.
- In a skillet over medium heat, melt a tablespoon of butter.
- Add minced garlic and sauté for about a minute.
- Add sliced mushrooms and cook until tender and moisture is released, about 5-7 minutes. Stir in thyme during the last minute.
- Preheat your oven to 400°F (200°C).
- Roll out chilled dough on a floured surface into a rough circle (about 12 inches).
- Place the dough on a parchment-lined baking sheet.
- Spread sautéed mushrooms in the center, leaving a one-inch border.
- Sprinkle Gruyère cheese over mushrooms.
- Fold edges of dough over filling, leaving an opening in the center.
- Brush edges with beaten egg for a golden finish.
- Bake for 30-35 minutes or until crust is golden brown.
