Instructions

  1. For the Crust: In a large bowl, mix flour, sugar, and salt.
  2. Add cubed butter and blend until crumbly.
  3. Gradually add ice water, mixing until dough forms.
  4. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  5. For the Filling: Preheat your oven to 375°F (190°C).
  6. Toss sliced pears with sugar, cinnamon, and lemon juice. Let sit for 10 minutes to release juices.
  7. Assembling the Pie: Roll out chilled dough on a floured surface to fit your pie pan.
  8. Place rolled dough in pie pan and fill with pear mixture. Pour any accumulated juices over the top.
  9. Create a lattice or cover with another layer of crust; cut slits for steam to escape.
