Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 or a 9×13 baking pan with cooking spray or line it with parchment paper.
  2. In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, eggs, and vegetable oil. Whisk until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture. Stir gently until just combined; avoid overmixing.
  5. Pour the batter into the prepared pan and spread evenly. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
