- 14 oz firm tofu
- 1/2 cup toasted sesame seeds
- 2 tbsp soy sauce
- Salt, to taste
- Pepper, to taste
- 1 cup jasmine rice
- 1 cup full-fat coconut milk
- 1 cup water
- Pinch of salt
- 2 green onions, chopped
- 1 tbsp fresh ginger, grated
Instructions
- Press the firm tofu between paper towels to remove excess moisture. Slice into even cubes.
- In a bowl, mix toasted sesame seeds, salt, and pepper. Coat each tofu cube in the mixture until fully covered.
- Preheat your oven to 375°F (190°C). Place coated tofu cubes on a lined baking sheet and bake for about 25 minutes or until golden brown.
- In a medium saucepan, combine jasmine rice, coconut milk, water, and a pinch of salt.
- Bring to a boil over medium heat, then reduce to low heat and simmer for about 15-20 minutes or until liquid is absorbed.
- Let sit covered for an additional five minutes before fluffing with a fork.
- Plate fluffy coconut rice and top with crispy sesame crusted tofu.
- Sprinkle chopped green onions and grated ginger on top before serving.
