Ingredients

  • 14 oz firm tofu
  • 1/2 cup toasted sesame seeds
  • 2 tbsp soy sauce
  • Salt, to taste
  • Pepper, to taste
  • 1 cup jasmine rice
  • 1 cup full-fat coconut milk
  • 1 cup water
  • Pinch of salt
  • 2 green onions, chopped
  • 1 tbsp fresh ginger, grated

Instructions

  1. Press the firm tofu between paper towels to remove excess moisture. Slice into even cubes.
  2. In a bowl, mix toasted sesame seeds, salt, and pepper. Coat each tofu cube in the mixture until fully covered.
  3. Preheat your oven to 375°F (190°C). Place coated tofu cubes on a lined baking sheet and bake for about 25 minutes or until golden brown.
  4. In a medium saucepan, combine jasmine rice, coconut milk, water, and a pinch of salt.
  5. Bring to a boil over medium heat, then reduce to low heat and simmer for about 15-20 minutes or until liquid is absorbed.
  6. Let sit covered for an additional five minutes before fluffing with a fork.
  7. Plate fluffy coconut rice and top with crispy sesame crusted tofu.
  8. Sprinkle chopped green onions and grated ginger on top before serving.
