- 3 tbsp Dijon mustard
- 3 tbsp pure maple syrup
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 bunch asparagus, trimmed
- 1 cup cherry tomatoes, halved
- Olive oil for drizzling

Instructions
- 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- 2. In a small bowl, mix together Dijon mustard, pure maple syrup, olive oil, salt, and pepper until well combined. Place salmon fillets on one side of the baking sheet and generously brush them with the mixture.
- 3. On the other side of the baking sheet, arrange asparagus and cherry tomatoes. Drizzle lightly with olive oil and sprinkle with salt and pepper.
- 4. Place the baking sheet in the preheated oven. Bake for about 15-20 minutes or until salmon flakes easily with a fork and vegetables are tender yet vibrant.
- 5. Remove from oven and drizzle any remaining glaze over the salmon before serving.
- 6. Transfer salmon onto plates alongside roasted asparagus and tomatoes. Garnish with fresh herbs if desired.
