- 1/4 cup honey
- 2 tbsp fresh lime juice
Instructions
- 1. Dice the chicken breasts into bite-sized pieces.
- 2. Mince the garlic and grate the ginger.
- 3. In a bowl, whisk together peanut butter, soy sauce, honey, minced garlic, grated ginger, and lime juice until smooth.
- 4. Place diced chicken in the slow cooker and pour the peanut sauce over it.
- 5. Gently stir to coat each piece of chicken in the sauce.
- 6. Cover and cook on low for 6 hours or high for 3 hours.
- 7. Ensure the chicken is fully cooked (internal temperature should reach at least 165°F or 74°C).
