Ingredients

  • 2 lbs pork belly, skin on
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp fresh thyme leaves
  • 1 large fennel bulb, sliced
  • 2 medium Granny Smith apples, cored and sliced

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, combine olive oil, minced garlic, sea salt, black pepper, and thyme leaves until well mixed.
  3. Score the skin of the pork belly in a crosshatch pattern without cutting into the meat.
  4. Rub the marinade all over the pork belly, ensuring it gets into the scored areas.
  5. In a roasting pan, layer sliced fennel and apple wedges.
  6. Place the seasoned pork belly on top of the fennel and apples.
  7. Roast in the preheated oven for about 3 hours until fork-tender.
  8. Increase oven temperature to broil (or up to 450°F/230°C) for about 10 minutes or until skin is crispy.
  9. Serve with pan juices drizzled over.
