- 2 lbs pork belly, skin on
- 2 tsp sea salt
- 1 tsp black pepper
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tsp fresh thyme leaves
- 1 large fennel bulb, sliced
- 2 medium Granny Smith apples, cored and sliced
Instructions
- Preheat your oven to 300°F (150°C).
- In a mixing bowl, combine olive oil, minced garlic, sea salt, black pepper, and thyme leaves until well mixed.
- Score the skin of the pork belly in a crosshatch pattern without cutting into the meat.
- Rub the marinade all over the pork belly, ensuring it gets into the scored areas.
- In a roasting pan, layer sliced fennel and apple wedges.
- Place the seasoned pork belly on top of the fennel and apples.
- Roast in the preheated oven for about 3 hours until fork-tender.
- Increase oven temperature to broil (or up to 450°F/230°C) for about 10 minutes or until skin is crispy.
- Serve with pan juices drizzled over.
