Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
- Press the mixture evenly into the bottom of each cupcake liner.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs and milk together. Gradually add this mixture to the dry ingredients until just combined.
- Fold in chocolate chips gently.
- Pour cupcake batter over the prepared crusts until each liner is about two-thirds full.
- Top each cupcake with mini marshmallows.
- Bake in the preheated oven for about 18-20 minutes or until a toothpick comes out clean (minus any marshmallow residue).
- Allow cupcakes to cool slightly before serving.
