Ingredients

Scale
  • 2 large Sweet Potatoes, peeled and cubed
  • 1 can (14 oz) Coconut Milk
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1-inch piece Ginger, minced
  • 2 tbsp Curry Powder
  • 1 tsp Turmeric
  • Salt to taste
  • Fresh Cilantro for garnish

Instructions

  1. Prep Your Ingredients: Peel and cube the sweet potatoes. Finely chop the onion and mince the garlic and ginger.
  2. Sauté Aromatics: In a large pot over medium heat, add 2 tbsp of coconut oil. Sauté onions until translucent (about 5 minutes). Add garlic and ginger; cook for another minute until fragrant.
  3. Spice It Up: Stir in curry powder and turmeric; cook for 30 seconds to bloom the spices.
  4. Add Sweet Potatoes: Mix in the sweet potato cubes, ensuring they are coated with spices. Pour in the coconut milk.
  5. Simmer Away: Add enough vegetable broth or water to cover the mixture. Simmer for about 20 minutes until sweet potatoes are tender.
  6. Finish with Flavor: Remove from heat, stir in chopped cilantro, adjust seasoning with salt if needed, and serve warm.
